Roast lamb marinate!

My husband had a cheff cook a roast lamb one evening when he was away and David phoned him a couple of nights ago to ask for the marinate recipe.

This is the one I used for our roast lamb on Australia Day.

Ingredients:

6-8 anchovies
2 garlic cloves
Two 30cm stalks of rosemary
60ml Olive oil

Blend all the ingredients together and put aside

Juice 2 lemons in a bowl, sprinkle salt and pepper and mix;
Puncher small holes all through the lamb and brush the
lemon mixture all over the lamb.

Next place the anchovy mixture in all the holes,
then cover and place in fridge over night.

So simple but so tasty...my kind of foods!
